3 Simple Ways to Cook Button Mushrooms

Button mushrooms are forgiving to cook, which makes them a good place to start if you're new to cooking with fresh mushrooms. Here are three ways we make them at home.

Garlic butter button mushrooms
Slice 250g of button mushrooms. Heat a tablespoon of butter in a pan on medium-high heat until it starts to foam. Add the mushrooms in a single layer and leave them alone for 2-3 minutes before stirring, so they get some colour instead of steaming. Add 2 cloves of chopped garlic, a pinch of salt and black pepper, and cook for another minute. Finish with chopped parsley or coriander if you have it.

Button mushroom curry
Sauté sliced onions until golden, then add ginger-garlic paste, chopped tomatoes, and your usual curry spices (turmeric, red chilli powder, coriander powder, garam masala). Cook until the oil separates from the masala. Add 300g of quartered button mushrooms and simmer for 10-12 minutes, since mushrooms release their own water as they cook. Finish with a splash of cream or a spoon of yoghurt for richness.

Mushroom and vegetable stir-fry
Slice button mushrooms alongside whatever vegetables you have on hand, capsicum and spring onion work particularly well. Stir-fry on high heat in a wok with a little oil, soy sauce, and a pinch of sugar, tossing constantly for 4-5 minutes so everything stays crisp rather than soggy.
